The is one of our more popular dishes. It can used as appetizers or casual main dishes. Also we haven’t met many people who don’t like grilled cheese. The inspiration for this is combining grilled cheese and tomato soup. The recipe is simple and delicious.
Bread – your choice
Sliced Cheese – your choice, but we like havarti or sharp cheddar
Shallot – one, minced
Cherry Tomatoes – a handful, halved
Garlic – one clove, smashed and minced
Siracha or Crushed Red Pepper Flakes – as hot as you want it
Heat a small saucepan on medium with a little neutral oil, such as canola or veggie and add a pat of butter.
Add the shallot and garlic. Season with Salt and Pepper. Sweat to soften.
Turn the heat to low and add the tomatoes and thyme. Cook until blistered and really soft. This might take a little time, but the idea is low and slow.
Add the hot stuff and cook another minute or two.
Remove from heat and either put into a blender or use an immersion blender. Blend until slightly chunky. Taste and season with Salt and Pepper.
To make grilled cheese, heat a pan on medium high, add a pat of butter, add bread, cheese, a slather of the tomato jam, and the top bread. When golden brown, flip, and brown the other side.
